Well I have discovered I like mine a little bit thicker so I decided to do mine little sheet this time!
Why they were cooking!
All Done! (I ate a few before I remembered to take the picture hehe)
Well cutting them this way was honestly not the best idea. Next time I will just cut the chips thicker but cutting them into sheets left me lots of the ends that were only flat on one side. I cooked a few but the coating doesn't stick well to the outside of the zucchini. I am way to cheap to throw them away and the skin contains a large amount of nutrients! So what to do? Well it was time for lunch anyway so I decided to throw something together in honor of the zucchini pieces!
I started with some garlic and red onion in a pan with a little EVOO.
I had some left over rice, corn, and black beans.
I added some adobo seasoning, lime juice, cumin, and a few other goodies!
Yummy!
Now what to do with it? Veggie tacos! I know tortillas aren't the best think for you but I can't get my household to eat wheat but we compromise with these.
Added filling to tortilla with some fresh cilantro and Greek yogurt (in place of sour cream). They were GREAT! Sorry I ate them and them realized I never took a final picture! Very filing for being meatless! Don't be afraid to get creative in the kitchen!!!

Just the sight of the zucchini and onions make me hungry :) I love sauteed veggies! It's one of my favorite healthy foods :)

Thanks for stopping by! I am trying to get my family to eat more "colorful" these days! Anything I can do to get my two year old to eat something not orange is a success! You should really try the Zucchini chips...soooo good! I didn't have an egg this time so I just dipped them in water first and it worked fine.

This past spring my family changed the way that we eat & I added some Jillian Michaels to my daily routine. I lost 32 pounds, and am happy to say that I reached my target weight. While we do not eat vegetarian meals, we do incorporate fresh fruits & veggies into our meals. This recipe looks awesome & we will definitely try it out.
